Been Cooking for Years
As a kid growing up in Italy, one of Chef Marc Murphy’s favorite street food was porchetta sandwiches — a rustic dish of boneless pork roast—prepared with sea salt, cracked pepper, minced garlic, fresh picked rosemary, and wild fennel seeds.
The meat is slowly spit-roasted for 7 hours and smells insanely good. When finished, it is sliced thinly and served on freshly baked bread. The deliciousness and popularity of this dish is the world's best kept secret. Over the years, Chef Marc Murphy has continued this Italian culinary tradition and is now sharing it with America.
He has perfected the art of making porchetta sandwiches - classic or topped with pickled vegetables, broccoli rabe or provolone and grain mustard.
